Korean Cucumber Salad

Ingredients:

  • 2 large cucumbers
  • 1.5 tbsp rice vinegar (or sushi vinegar)
  • 3 tbsp gochujang
  • 1.5 tbsp honey
  • 1.5 tbsp sesame oil
  • 2 heaped tsp chili flakes
  • Sesame seeds

Instructions:

  1. Core, slice, and salt cucumbers. Let sit for 4+ hours or overnight.
  2. Drain cucumbers.
  3. Mix all ingredients (except sesame seeds) and add to cucumbers.
  4. Optional: Roast sesame seeds before adding.



Crispy Nacho Chicken Strips

Ingredients:

  • 500g chicken breast fillet
  • 1 egg
  • 100g nacho chips
  • 50g flour
  • Salt and pepper

Instructions:

  1. Cut chicken, season, and crush nacho chips.
  2. Coat chicken: flour, egg, nacho crumbs.
  3. Air fry at 180°C for 8-9 minutes, turn at 4 minutes.



Air Fryer Tandoori Chicken


Ingredients:

  • 400g chicken
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 heaped tbsp yogurt
  • 1 tbsp tomato paste
  • 1 tbsp garlic powder
  • 1 tsp ground ginger
  • Salt and pepper
  • 1 tsp oil
  • Juice of a lemon

Instructions:

  1. Cut chicken into strips.
  2. Mix ingredients with chicken, rest for 1 hour.
  3. Skewer chicken, air fry 17 min at 200°C.
  4. If using wooden skewers, wet them before.


Chili Con Carne


Ingredients:

  • 500g ground beef
  • 2 cans of tomatoes
  • 2 cans of kidney beans
  • 1 can of corn
  • 2 bell peppers (preferably green and yellow)
  • 1 onion
  • 1 garlic clove
  • 1 spicy chili or 3 mild ones
  • Cumin, salt, pepper

Instructions:

  1. Season beef with pepper and salt.
  2. Sauté diced onion, garlic, cumin until onions are translucent.
  3. Add chilies, stir 2 min.
  4. Brown beef, add cumin.
  5. Add tomatoes, kidney beans (with liquid), cook 20 min.
  6. Dice bell peppers, add peppers and corn, cook 20 min.
