Korean Cucumber Salad
Ingredients:
- 2 large cucumbers
- 1.5 tbsp rice vinegar (or sushi vinegar)
- 3 tbsp gochujang
- 1.5 tbsp honey
- 1.5 tbsp sesame oil
- 2 heaped tsp chili flakes
- Sesame seeds
Instructions:
- Core, slice, and salt cucumbers. Let sit for 4+ hours or overnight.
- Drain cucumbers.
- Mix all ingredients (except sesame seeds) and add to cucumbers.
- Optional: Roast sesame seeds before adding.
Crispy Nacho Chicken Strips
Ingredients:
- 500g chicken breast fillet
- 1 egg
- 100g nacho chips
- 50g flour
- Salt and pepper
Instructions:
- Cut chicken, season, and crush nacho chips.
- Coat chicken: flour, egg, nacho crumbs.
- Air fry at 180°C for 8-9 minutes, turn at 4 minutes.
Air Fryer Tandoori Chicken
Ingredients:
- 400g chicken
- 2 tsp paprika
- 1 tsp cumin
- 1 tsp garam masala
- 1 tsp turmeric
- 1 heaped tbsp yogurt
- 1 tbsp tomato paste
- 1 tbsp garlic powder
- 1 tsp ground ginger
- Salt and pepper
- 1 tsp oil
- Juice of a lemon
Instructions:
- Cut chicken into strips.
- Mix ingredients with chicken, rest for 1 hour.
- Skewer chicken, air fry 17 min at 200°C.
- If using wooden skewers, wet them before.
Chili Con Carne
Ingredients:
- 500g ground beef
- 2 cans of tomatoes
- 2 cans of kidney beans
- 1 can of corn
- 2 bell peppers (preferably green and yellow)
- 1 onion
- 1 garlic clove
- 1 spicy chili or 3 mild ones
- Cumin, salt, pepper
Instructions:
- Season beef with pepper and salt.
- Sauté diced onion, garlic, cumin until onions are translucent.
- Add chilies, stir 2 min.
- Brown beef, add cumin.
- Add tomatoes, kidney beans (with liquid), cook 20 min.
- Dice bell peppers, add peppers and corn, cook 20 min.
